Todays recipe that I will share is something very simple, delish and perfect for these cold winter days and also 21 Day Fix Approved!! Giving you a heads up that a lot of my meals will be 21 Day Fix Approved.. If you are not familiar with it. It’s an amazing program that helped contribute to my weight loss and has become part of my life. It’s a nutrition and fitness program that makes losing weight so simple, anyone can do it. It really has made counting calories and measuring food with a scale so old times for me! This little containers are my measuring cups and that is all I need!!! Chicken Soup with a Latin Twist
Ingredients:
Onions
Fresh Garlic
Cilantro (Lots of this for extra flavor)
Carrots
Celery
Chicken Breast
Brown Rice
Oregano
Sea Salt
I dice up the onions, garlic, carrots, celery and cilantro… and all other ingredients. Sautéed with a lil Pam… once browned I add water to the pot. Add Chicken.. About 25 minutes in I add 1/2 Brown rice… Cover pot and let it all boil. After about an hour I pull out the chicken.. Shred it (optional) and put it back in.. Once fully done I let it cool and serve with fresh cilantro sprinkled on top! So yummy and delish.. You can also add raw diced onions, tomato and a little bit of sliced avocado.. SOOO delish.. I am Colombian and we always add this to our soups to give it a nice kick.
